We (Mark and Nicky), thought you may like to know a little about our cafe so here is an abridged version of our bay tree story to date.
It all began in Nover 2010 when we moved to Bury St Edmunds so we could turn our life's dream of running our own small eatery into reality. We fell in love with the bay tree and St Johns Street immediately and set about leaving our old lives to start this exciting new chapter.
Initially, we worked for 6 months with the inherited menu before implementing our own ideas, feel and flavours. This period gave us the chance to learn about our customers, local produce availability and the community we served. During this time we also gave our cafe a revamp closely followed by the introduction of Mark's new dishes to the menu, still keeping some of the local's favourites of course, but adding his own twists and ideas.
Mark may be considered a tad old-fashioned as he still insists on making as much as possible by hand, rather than turning to boil in the bag or zap from frozen, but it pays off in so many ways. He continues to love his job and he loves being hands-on even if it does mean working long hours. It brings us both enormous satisfaction to see customers enjoy the food produced by his kitchen.
Years on and we are still living the dream. We can't say there haven't been ups and downs or trials and tribulations along the way but we have been so blessed by the support of our customers, staff and friends, which makes everything worthwhile and fills us with pride.
